Lathyrous Sativous L.
Lathouri is a legume, also know as grass pea in some countries, which was cultivated in Greece since 7000 B.C., from which also comes the well known fava.
Our family cultivates it without the addition of any fertilisers or pesticides, in a plateau over 1.200 meters above sea level, in fields that during the winter are covered with water. This, along with continuous hand sorting of the crop, gives us a product, with short cooking time and high in nutritional value as it can be consumed with its peel on.
Lathouri is high in proteins, edible fibers and low in salt.
