Ingredients for 4

250 gr. Lathouri

2 Dry onions

2/3 of the cup of olive oil

300 gr Sigklino cut into small pieces or sausage of your choice

1 teaspoon of oregano

8 cups of water

Some parsley finely chopped

2 fresh onions finely chopped

Juice of 1 lemon or 1/2 orange




Fava from Lathouri with paprika, fresh onion and Sigklino


1) Put the Lathouri in water from the night before.


2) The next day wash them well until clean water runs out. In a saucepan, add the water and one onion cut into the middle and boil it along with the Lathouri, scraping the foam that is created.


3) Lower the temperature and simmer until soft, for about 40 minutes. Remove the water and the onion and keep the water aside, add the salt in the saucepan, pepper and paprika as well as 1/3 of the cup of olive oil.


4) Mash them with a hand mixer, adding as much water as we want, from what we hold until it gets a velvety texture, then add the parsley and the fresh onions


    Sausages or sigklino

5)Chop the rest of the onion and sauté in olive oil, add the sausages or the sigklino and stir for 5 minutes. Pour the lemon juice or orange juice and add the herbs, remove it from the heat and serve it with the Lathouri, sprinkled with a little paprika.
